Squash is split into two different groups. You have winter squash and those are pumpkins, acorn squash, etc. Then there is summer squash which include zucchini and yellow squash.
If you have or have ever had a garden, you have probably grown yellow squash. Or maybe you have been given some yellow squash by a friendly neighbor or purchased some at your local grocery store. Whatever the case you have most likely tried yellow squash.
It is good steamed, fried, grilled, and in pretty much any way you can imagine using it. When you have too much yellow squash, you want to store it to use later and sometimes much later.
Can you freeze yellow squash to preserve it?
You can freeze yellow squash to save it for meals later on. If you find yourself with an abundance of yellow squash, freeze it!
Freezing squash is a great way to save it for future use. You can store it in the freezer and have it on hand for weeks or months to be used wherever you’d like. Its easy to freeze squash and I will discuss in length the proper way to do so later on this article.
When done properly it will still taste good after it has been frozen. After you have frozen the squash and decide to use it for dinner, you can choose to use it frozen or thawed.
To thaw the veggie simply place it in the fridge to defrost for a few hours or overnight. Then you can use it however you wish. If the squash is going into a pot of soup or a hot pan, you don’t even have to thaw it and can just toss it right in frozen.
It will thaw and cook quickly and will save you some extra time.

Can You Freeze Raw Yellow Squash?
You have so much squash you’re not sure how you are going to eat it all up. Freezing vegetables help them to last longer so you wonder, can I freeze raw yellow squash?
You can definitely freeze raw yellow squash. All you need is fresh squash that has been washed, sliced and blanched and you can freeze it for up to 10 months.
Summer squash is a great vegetable to have on hand and make for delicious sides to meals and even the entrees themselves. If you enjoy cooking squash, when you are out shopping, stop by a farmers market or grocery store, you may find yourself picking out some yellow squash.
Be sure to choose the freshest squash to bring home. These will be the squash with no wrinkles or blemishes.
Once you get home, wash the squash and gently scrub to get all of the dirt off of them. You won’t want to freeze dirty squash and this makes for less steps later.
Then you will want to slice off the ends of the squash and dice it up into half inch rounds or cubes. They way you cut it now will be based on how you want to cook it later.
Now it’s time to blanch the veggie. You’ll want to lightly blanch the squash to make sure it doesn’t get mushy, otherwise frozen raw, freezing it will affect the texture big time.
Place those sliced or cubed pieces of squash in boiling water for about a minute and then remove them with a slotted spoon and immediately place in a bowl of ice water for another minute.
Then you will need to drain the squash. Do this by transferring them over to a baking sheet lined with paper towels to absorb the rest of the moisture.
Now to freeze the squash. You don’t want it to end up freezing together in a big clump so in order to prevent this you need to flash freeze it.
Use that baking sheet from before and remove the paper towel and then line it with parchment paper. Spread the squash out in an even layer on it then stick it into the freezer.
Let it freeze for about an hour or until they are solid. Transfer all of the squash over into freezer bags or freezer containers, label the bag with the current date (so you know how long it has been in the freezer) and store for up to 10 months in the freezer.
Take out and thaw the squash wherever you feel like making a meal using the delicious veggie.
Can You Freeze Squash Without Blanching It First?
So, you just don’t have the time to blanch the squash before freezing it. You know it will help preserve the texture but it’s a step you have to skip.

Even though blanching helps to keep vegetables good while stored in the freezer, if you are pressed for time and want to skip this step, you can freeze the squash without blanching it first.
If you are freezing fruits or vegetables, over time they will change in color and their nutrients will diminish. This is all due to the enzymes and bacteria that break down the food. To keep it good and preserve the color, flavor and texture of veggies, it is recommended you blanch them first before storing them in the freezer.
It’s easy to do and only takes a couple minutes. However, if you wish to skip this step you can. Just prepare the squash as usual and put those slices in a freezer bag or freezer containers to be frozen.
Blanching is just to stop enzymes from ruining the flavor and texture and not for safety. Still, squash that has not been blanched before freezing won’t taste as good after it is thawed and you will need to use it up within 4 to 6 months.
After this time, it will slowly decrease in nutrients and texture.
But if you would like to freeze squash without blanching it can be done. If you know it will be in the freezer for long-term storage, consider blanching it though.
If you know you will be using a vegetable soon, its okay to skip the blanching process and head straight to freezing it.
