Is Eggplant Lasagna Healthy?

Lasagna is always a hit for dinner. You have noodles, sauce, meat, and many delicious kinds of cheese. However, lasagna is not exactly the healthiest option for dinner. 

While it may taste delicious, the mixture of noodles, meat, and cheese can add up in calories and carbs rather quickly. If you are trying to make healthier meal choices, does this mean that lasagna will never be on the dinner menu again? 

Eggplant can be used in place of noodles for your lasagna. You can start by taking two medium-sized eggplants and slicing them up. 

Once they are sliced, you can grill the eggplant slices and use them as the noodle layers in your lasagna. If you decide to replace the noodles in your lasagna with eggplant, does this make the lasagna healthy? 

Swapping out regular lasagna noodles for eggplant slices will make your lasagna healthier but it still won’t be a very healthy dish. Regular lasagna has about 45 carbohydrates per serving with 4-5 grams of fiber. When you use eggplant as a substitute for your noodles, you cut your carbohydrates per serving in half. 

Is Eggplant Lasagna Healthy? 

A serving of eggplant lasagna contains only 22 carbohydrates and 4-5 grams of fiber. 

While there may not be much of a calorie difference between regular lasagna and eggplant lasagna, the health benefits of using eggplant are far greater than using noodles. When you use eggplant instead of noodles you are also getting about 80% of your vitamin B12 needed for the day. 

You will also get about 14% of your daily iron needs by eating a serving of eggplant lasagna. 

You can also skip the meat when creating your eggplant lasagna as well. You will still receive quite a few vitamins and minerals and also cut the calories down to 272 per serving which would make it a healthy meal. 

However, removing the meat also does remove a majority of the protein your body needs. Be sure to substitute the protein you removed from the eggplant lasagna throughout the day. 

Is Eggplant Low In Carbohydrates? 

Eggplant is a very versatile food. You can slice up an eggplant and then either grill, saute, roast, fry, bake, or steam it. You can also use it as a substitute for pasta in lasagna and as a main ingredient, like in eggplant parmesan. 

However you decide to prepare your eggplant, is it a food that is low in carbohydrates?

Whether you are following a low-carb diet for weight loss or to regulate blood sugar, eggplant is a safe food to eat. Eggplant is low in carbohydrates. 

One pound of eggplant has 137 calories, and 32 grams of carbohydrates. While 32 carbohydrates does sound like a lot, it is still less than two slices of bread. 

Is Eggplant Parmesan Healthy?

Eggplant parmesan is a substitute for chicken parmesan. Chicken is known for its high protein and many other health benefits, however, it can lose some of its “healthiness” after being prepared. 

What about chicken and eggplant parmesan? Though both dishes are prepared very similarly, is one any healthier than the other? 

When it’s all prepared and cooked, ultimately, eggplant parmesan is healthier than chicken parmesan. The eggplant parmesan has less breading than the chicken. However, if you choose eggplant parmesan, it can also be a lot less filling than eating chicken parmesan. 

While both chicken and eggplant have great health benefits, their health benefits differ greatly. Both foods are low in calories and carbs and are both healthy foods. 

However, once you add all the other ingredients for chicken and eggplant parmesan, both become a little less unhealthy. After the breading of the chicken and adding breadcrumbs to the eggplant, they have lost a little bit of their “healthiness.”  

Do You Leave The Skin On An Eggplant? 

When you are trying new foods, it can be intimidating to know if you are eating them the right way. For example, why do we eat the skin of apples but not the skin of an orange? 

You can bite right into an apple but to do the same thing to an orange seems absurd. 

Then you have foods where taking the skin off is a preference, like potatoes. If you are making baked potatoes, you need the skin to help keep the structure together. 

However, if you are making mashed potatoes, it’s best to peel the potatoes. Which is it for eggplants? Do you leave the skin on or peel it off? 

Eggplants are much like potatoes in the sense that you can eat the skin but you can also peel it as well. Most recipes call for cut and sliced pieces of an eggplant. 

You don’t necessarily need to take an extra step and peel the eggplant before slicing it. The choice is entirely yours, you can either choose to leave the skin for extra health benefits or peel it off. 

Are There Health Benefits To Eating Eggplant? 

Eggplant is typically thought of as a vegetable. However, what an eggplant is can be somewhat of a debate. 

Since they grow from a flowering plant and also have seeds, they can technically be considered a fruit (similar to tomatoes). Whatever it is classified as eggplant is a great substitute for many dishes. 

If you use eggplant as an ingredient substitute, are there any extra health benefits? 

  • Eggplant is rich in various nutrients that your body needs. One cup of eggplant contains these nutrients: Protein, Manganese, Folate, Potassium, Vitamin K, Vitamin C, Niacin, Magnesium, and Copper. 
  • Eggplant is high in antioxidants. Antioxidants help protect the body from free radicals. Antioxidants are great in helping prevent many types of chronic diseases. Eggplant is rich in anthocyanins, this is the reason for the bright color and also the source of antioxidants.
  • Eggplant can help with controlling your blood sugar. Eggplant is high in fiber. High-fiber foods are great for keeping blood sugar down as they slow the rate of digestion and absorption of sugar in the body. The slower your body absorbs the food, the steadier your blood sugar is. 
  • Eggplant can aid in weight loss. Since eggplant is high in fiber and low in calories, this food can help aid in weight loss. Fiber moves through your digestive tract slower than non-high fiber foods and can promote a feeling of fullness. The longer you feel full, the fewer calories you will consume. 

Final Thoughts

Eating eggplant lasagna is a much healthier option than regular lasagna. Not only will you lower your carb intake but you will also receive the many health benefits that come from eating eggplant.
